Honey and Soy Salmon, Moroccan Salmon, Rump Steak Burger, Whole Fillet

Honey and Soy Salmon

Ingredients:

1 chopped onion

1 table spoon chopped coriander leaves

2 teaspoons olive oil

1 teaspoon grated ginger

Salt and ground pepper

1 tablespoon fresh lime juice

2 tablespoons soy sauce

2 tablespoons honey

4 Salmon fillets

Mix in the oil and ginger coriander, onion. Season with salt and pepper.

Score through the skin lengthwise on the bottom of the salmon fillets, evenly stuff the slits with the herb mixture. Season the fish with salt and pepper.

Stir together the lime juice, soy and honey until smooth. Place the salmon, skin side up, on the grill and cook until well marked, 3 to 4 minutes. Turn the salmon and continue to cook, brushing the tops with the sauce, until the fish is cooked through, about another 3 to 4 minutes. Transfer to a serving plate.

 

Moroccan style salmon

Ingredients

1/2 cup plain yogurt

1 lemon juice

1 tablespoon extra-virgin olive oil,

2 to 3 cloves garlic, minced

1 tablespoon chopped coriander

1 1/2 teaspoons ground cumin

Salt and freshly ground pepper

4 salmon fillets

 

Directions

Stir together the yogurt, lemon juice, olive oil, garlic, coriander, cumin, 1/4 teaspoon salt, and pepper to taste in a small bowl. Keep half of the sauce; cover and refrigerate the remaining sauce. Add the salmon to the marinade. Refrigerate for 20 to 30 minutes, turning over once.

Remove the salmon from the marinade take off excess yogurt Lightly oil the grill and add the salmon; cook, turning once, until browned on the outside  4 to 6 minutes per side, depending on the thickness. Serve with the reserved yogurt sauce and garnish with the herbs and lemon wedges.

 

Deluxe rump steak burger

Ingredients

1 300grm rump steak

1/2 cup Mayonnaise

1 teaspoon chopped fresh basil

2 garlic cloves, finely chopped

Olive oil

4 Rashers rind less bacon

1 chabatta

Sliced cheddar

Avocado

Mixed salad leaves

 

Method

Combine mayonnaise and garlic basil refrigerate.

Season steaks with salt and pepper.

Braai steak until cooked to your liking.

Transfer to a plate and cover loosely with foil. Set aside to rest.

Braai bacon for 2 minutes each side or until crisp.

Layer cheese on cut side of bread roll tops.

Spread garlic mayonnaise over bread base.

Top with salad leaves, steaks, bacon and top with Avocado

Sandwich with bread top

 

Whole fillet

Ingredients

1/4 cup olive oil

1 2 table spoon Worcestershire sauce

2 garlic cloves, crushed

1/4 cup  dry red wine

1 tbs chopped thyme leaves

2  table spoon whole grain mustard

1 chopped onion

1 tbs chopped rosemary

1 whole fillet

 

Method

Combine oil, Worcestershire sauce, garlic, mustard, onion wine and thyme in a bowl. Season with salt and pepper. Add the beef and toss to coat. Marinate for 30 minutes.

Place fillet on top of Braai grid, Braai for about 30 mins continuously turning

Remove from the Braai and cover loosely with foil, then set aside for 5 minutes to rest.

Slice beef against the grain into 1cm-thick slices.

Serve with sauce, and roast vegetables or salad, if desired.
